Abstract

|
The object of study investigated the antioxidant activity of water soluble chitosan (WSC) with Ilex serrata extracts. To find out about this fact, we obtained the polyphenol content, ABTS radical scavenging activity, and ferric reducing antioxidant power for WSC with extracts of Ilex serrata. It can be seen that polyphenol contents, ABTS radical scavenging activity, and ferric reducing antioxidant power of Ilex serrata extracts showed the highest value at the distilled water which extracted from stem. The synergy effect are also shown at the ABTS radical scavenging activity and ferric reducing antioxidant power by WSC with Ilex serrata extracts.
